The Easiest Pumpkin Muffins of All Time

I posted my pumpkin muffin “hack” on Instagram stories last week and I got so many questions about them, more questions than I have ever gotten on social media about anything! I call it a hack because to call this a “recipe” would just be silly and dishonest. Nothing here is from scratch, it’s a box mix hack, but it’s delicious!

Anyhoo I put everything in one place because y’all had a lot of questions. I promise it’s as easy as they seem.

What you’ll need:
Box of pumpkin bread mix
1 can of pumpkin puree
Chocolate Chips Optional (I mean kind of, what culinary monster would skip chocolate chips?)

…that’s it.

I like the Trader Joe’s Pumpkin Bread mix, but I know not everyone is near my beloved TJs. The brand probably isn’t that important to this ridiculously easy hack, I am sure at this time of year most grocers are stocked with pumpkin bread mix and pumpkin puree, but if not I found many many mixes on Amazon like this one and this one is the actual Trader Joe’s mix available online.

Preheat the oven to 400 degrees. While the oven is preheating I mix the box with the pumpkin puree in our Kitchenaid and add in chocolate chips. I do about a cup of chocolate chips, but these muffins can definitely support more chips if you like a lot of chocolate. The key here is DON’T ADD ANYTHING ELSE. The box will have instructions for eggs, oil, etc, but you don’t need it. The pumpkin puree replaces it all and for less calories, but more moisture.

Bake for 20 minutes or until a toothpick comes out totally clean. These can end up ooey gooey and not cakey enough if you take them out too early. They should be super moist and ever so slightly gooey, but these are definitely a cakey texture when done properly. Just be sure to keep checking with that toothpick until it comes out clean. I had to tinker with how long to leave ours in for a while, but every oven is a little different.

Enjoy! I eat multiple of these a day and make at least one batch a week. Ooops…
